Mum special Rajma (Kidney Beans)


Ingredients:

  1. Ginger
  2. Garlic
  3. Green Chilly
  4. Cumin Seeds
  5. Coriander Powder
  6. Bay leaf
  7. Red Chilli Powder
  8. Sugar
  9. Salt
  10. Turmeric
  11. Garam Masala
  12. Refined Oil
  13. Ghee
  14. Rajma (Kidney Beans) : Soaked overnight
  15. Potato
  16. Onion
  17. Tomato

Recipe:

  1. Make a paste of an inch of ginger, 6-8 garlic cloves, 3 medium sized onions, 1 big tomato, 4 green chillies with 2 teaspoons of coriander powder and 2 teaspoons of cumin seeds.
  2. Put 5 table spoons refined oil in the pressure cooker and heat it for 1 minute.
  3. Put 1/2 tea spoon cumin seeds and 2 bay-leaves with one medium sized chopped onion.
  4. Fry it for 2 minutes and put 1 teaspoon full of red chilli powder and 1/2 teaspoon of sugar.
  5. Mix it and put the paste made in step 1 in it.
  6. Cook it while stirring it for 10-15 minutes until the oil starts coming out of the paste and it becomes brown. (Kosha- in Bengali)
  7. Put pieces of 2 potatoes (2 inch cubes) in it and mix it.
  8. Put the already soaked Rajma in the mix and stir it for a minute and let it cook for around 5-7 minutes. (Kosha)
  9. Put Salt according to taste and 1 teaspoon full of turmeric powder.
  10. Pour 300 ml water (or according to the requirement) and mix it properly.
  11. Put the lid on and let the pressure cooker have 5- 10 whistles according to the altitude. e.g. In northern part of India it will get cooked in 5 whistles and for southern part it might take 8-10 whistles.
  12. After the Rajma is cooked and soft put 1 teaspoon Garam masala and 1 teaspoon Ghee. Mix it well and serve with a couple of Coriander leaves and sliced Green chilli on top.
